Pampoen Koekies recipe – How to make South African Pumpkin Fritters recipe (eggless)
Pampoen Koekies is a South African dessert made with cooked pumpkin. It can be served with powdered sugar or cinnamon sugar or sugar syrup, choice is up to yours. The original recipe contains eggs, But I tried these fritters without eggs and they turned out well. So here is the South African eggless pumpkin fritters recipe. These are very light, mildly sweetened and simple to make. If you want you can also add vanilla essence.

- 1 cup Pumpkin puree (cooked and mashed)
- 3/4 cup All purpose flour
- 1/4 cup Sugar
- 4 tsp Cornflour
- 1/4 cup Milk
- 1/4 tsp Cinnamon Powder
- 1/2 tsp Baking Powder
- Pinch of salt
- Oil for deep frying
- Powdered Sugar for dusting

Peel and chop the pumpkin into small pieces. Pressure cook the pumpkin with enough water for 2 whistles or in a saucepan cook on medium heat for 10 minutes till the pumpkin get mushy. Switch off the flame and let it cool down.

Puree the Pumpkin in a blender and take into a bowl.

Add flour, sugar, cornflour, salt, baking powder, cinnamon powder to the pumpkin puree and mix it.

Now add milk and mix well to combine all and forms a batter. Batter should be thick consistency.

Heat a pan with oil for deep frying. Take little mixture and drop in the oil using your hands or use a spoon. Fry the fritters in batches until golden brown on medium flame.

Remove and place them on absorbent paper. Finally dust with powdered sugar and serve hot!
