Carrot Peanut Soup Recipe - It is a quick soup recipe made with carrots and peanuts. Simple and healthy soup that you can make in under 30 minutes.
- 2 medium Carrots
- 1/4 cup Peanuts (I used roasted peanuts)
- 1 medium Onion chopped
- 1 Tomato
- 5 Garlic chopped
- 1 inch Ginger
- 1/4 tsp Pepper powder
- 2 tsp Olive Oil
- Salt to taste
Wash, peel and chop the carrots and set them aside.
Heat olive oil in a pan, add ginger, garlic and saute them.
Add onions, peanuts and fry until onions turn translucent. Now add carrots, tomatoes and saute for a few minutes.
Add 1 cup of water and stir. Cover it and cook over low heat or pressure cook for 2 whistles.
Once carrots become tender, switch off the flame and puree in a blender.
Take the puree in the same pan, add salt and pepper powder and water. Adjust the consistency and reheat on low flame for 5 minutes.
